ペルミ Perm のある菓子工場の従業員40人が、食堂での昼食後に食中毒を発病した。このうち3人は重症のため集中治療室で治療されている。Rospotrebnadzor [Federal Service for Consumer Affairs and Human Welfare] 当局の専門家らにより、食堂に置かれた皿や食塩から亜硝酸ナトリウム sodium nitrite が検出された。
[Mod.TG －硝酸ナトリウム Sodium nitrate は、いろいろな状況下でしばしば食塩 table salt と間違えられる。摂取した場合の症状として、胃腸炎、腹痛、めまい、血性下痢、けいれん、衰弱などがある。Purging 下剤と diuresis 利尿薬の使用が必要となる。少量を反復して摂取した場合、頭痛や精神障害がおきる。塩化ナトリウム sodium chloride（=食塩）と間違えて、硝酸ナトリウム sodium nitrate が摂取された場合、一般的にその量は、祝い事の食事など大量の食事に大量に使用される事が多い。
まれなケースとして硝酸 nitrates がより毒性の強い亜硝酸 nitrites に変化する例が報告されている。
硝酸ナトリウムはずっと以前から、肉の保存 curing に使用されてきた。細菌の作用で硝酸が亜硝酸に変化し、ボツリヌス中毒の原因となる微生物を殺菌する。長期保存ハム slow-cured hams 以外は、亜硝酸ナトリウムから、概ね硝酸ナトリウムに置き換わっている。亜硝酸は，ボツリヌス中毒のトキシンを産生する芽胞形成性のボツリヌス菌 _Clostridium botulinum_ を殺菌する目的で，一部の食品に添加されている。ボツリヌス中毒 botulinum の語は the Latin word でソーセージを意味する botulus から来ており、亜硝酸処理がなされるまで長い間多くの死亡の原因となってきた。抗殺菌作用としてのほか、亜硝酸は保存された肉の風味、感触や色 flavor, texture, and pink color を整える目的で使用されることもある。血中濃度が高くなると、亜硝酸の鉄の酸化作用によりヘモグロビンの1価鉄が2価鉄になり、メトヘモグロビン methemoglobin が産生される。メトヘモグロビンは酸素を運搬せず、血液は褐色となる。メトヘモグロビン血症 methemoglobinemia の症状として、頭痛、倦怠感、頻脈、体力低下、めまいなどが起きる。組織での酸素化が低下し、真の酸素欠乏に達すると、呼吸困難、アシドーシス、不整脈、昏睡、けいれん、そして死亡することもある]

Polio in Angola and the Democratic Republic of the Congo -- 8 Sep 2010アンゴラ Angola とコンゴ民主共和国 Congo DR において、野生株1型ポリオウイルス wild poliovirus type 1 (WPV1) による感染流行が発生している。
アンゴラでは2007年4月に始まった流行が，2010年になってこれまでポリオの発生が確認されていなかった地域 (the provinces of Bie, Bengo, Huambo, Lunda Norte, Lunda Sul, and Uige) で流行し始め、隣国のコンゴ（民）でもアンゴラとの国境地帯にある Kasai Occidental province で再び流行し始めている。
This outbreak は12か月以上感染が継続していることから、"re-established" transmission と定義されている。DR Congo では2010年のアンゴラからの輸入ウイルス newly-imported virus のほか、6月20日に麻痺を発症した東部の Katanga province の症例もアンゴラからの輸入感染例のウイルスとの関連性が認められた。DR Congo 東部では2008年以降ポリオ感染は発生していなかった。
2009年、同じウイルスの感染循環によりブルンジでも1例の感染が確認されている。
DR Congo はこれまで the Advisory Committee on Poliomyelitis Eradication (ACPE ポリオ根絶諮問委員会）が "suspected" re-established transmission を疑っていた国であるが、今回そのことが確認された。（2010年、2009年との比較で患者数が99%減少した）ナイジェリアの進歩や、（2010年5月1日以降1人の患者も出ていない）西アフリカ，（12か月以上発生のない）the Horn of Africa の例と比べると、現在中央アフリカが Africa's polio eradication efforts にとって最も大きな障害 risk となっている。アンゴラおよびコンゴ DR から各国に WPV 感染が拡大するリスクが高い。この2カ国の2010年の輸入ウイルス感染流行への対応は不適切なものであり、Independent monitoring of supplementary immunization activities (SIAs 追加予防接種活動の独自モニタリング) では key areas of Angola (including Luanda, Lunda Norte, and Lunda Sul) の最大25%の小児が接種漏れになっている可能性がある。DR Congo においては、2009年11月以降国内東部では何の対応策も実施されていない。

Ostreid herpesvirus (OsHV1, mu-var) が Oosterschelde の Japanese oysters で検出されている。ヘルペスウイルス早期感知モニタリングの作業中、見つかった。このウイルスは、高い確率で Pacific oysters を死滅させることもある牡蠣の疾患の新興の、原因の1つである。他の要因がどの程度関与しているかは不明である。The oyster herpesvirus disease は、food safety and public health には影響しない
