いずれもフランス南部の同じレストランで食事をした9人が、ボツリヌス中毒 the rare foodborne botulism poisoning で入院となり、うち3人が重症となっている。Bordeaux で現地のレストランでの食事が関係するボツリヌス症を発症し、7人が入院となり、3人は "serious condition, requiring assistance to breathe" であると12日、the head of the intensive care unit at Bordeaux University Hospital, Benjamin Clouzeau が明らかにした。

Dr. Alexandre Duvignaud and colleagues at the GeoSentinel site in Bordeaux have identified an outbreak of probable botulism.
5人の北米からの旅行者と1人のドイツ人旅行者を含む少なくとも8人が、9月8日から11日までの間にボツリヌス中毒の症状を発症し、うち5人が集中治療室で人工呼吸器管理となっている。
原因として疑われている食品 The food suspected of being the source of the outbreak は artisanal sardines（手作りサーディン）, "rillettes," で、現地レストラン内 in a restaurant located in Bordeaux city center, close to the Rugby World Cup France 2023 fan zone で作られ提供されていた。
入手可能な情報 the limited available epidemiology では、the 1st at-risk meal が提供されたのは9月4日で、最後に出されたのは同9日である。問題の食品を食べた客の中には、Rugby World Cup matches のサポータですでに国外に移動し、帰国後に発症したものがいるかもしれない。

"fried rice syndrome" と呼ばれ、調理後のコメの不適切な管理が行われた場合に発生する。セレウス菌は増殖するため、食中毒はコメの摂取から数時間後に発症することがある。冷蔵庫ではなく室温で冷まされた調理米では、芽胞から細菌が萌出しトキシンを産生し、再加熱を行ってもトキシンは壊れず、食中毒の原因となる。
[Mod.LL－ Bacillus cereus_ food poisoning is the general name used for the illness.
しかしこの細菌により、2種類の食中毒がおこることが知られている: diarrheal（下痢型）and emetic（嘔吐型）。
The emetic syndrome の原因は cereulide で、加熱やpHに対し安定的なペプチドトキシン a heat- and pH-stable peptide toxin である。このトキシンを含む食品の摂取により、30分から5時間以内に嘔吐が起きる。黄色ブドウ球菌性食中毒と似た症状になる。
The diarrheal illness (下痢型、北米や欧州に多い) は高分子重量タンパク a high molecular weight protein を原因とするが、the emetic or vomiting type (日本では the diarrheal type よりも多い) of food poisoning の原因は加熱に対し安定的な低分子重量タンパク a low molecular weight and heat-stable protein が原因となる。一部は、an overlap between the diarrheal and the emetic types of illness となる ... ]
