パン a type of bread の摂取後に200人以上が発症した原因が判明した。保健当局者 the Directorate-General of Health (DGS) は、この209例には the consumption of broa de milho (a type of cornbread、コーンブレッドの1種) in some regions of the country since mid-July [2023] が関係していると述べた。
潜伏期間および病悩期間は短かく、患者らには、口渇、視野障害、めまい、意識混濁、脱力などの共通する症状が、摂取の30分から2時間後に認められた。多くが軽症であったが、40人以上が入院治療を必要とした。

とうふによるサルモネラ感染症 A Canadian tofu salmonellosis outbreak は the 1st of its kind であると、the CDC's Morbidity and Mortality Weekly Report for 11 Aug 2023 で報告された。サルモネラ菌 _Salmonella [enterica_ serotype] Typhimurium により2021年、約38 people in 10 public health districts in Ontario, Canada が発病した。当局は、衛生上、および加熱過程の瑕疵が原因としている。これまでに、とうふがサルモネラ感染症 nontyphoidal _Salmonella_ outbreaks に関与したことはなかった。
From May to mid-August 2021, Public Health Ontario investigated a cluster of 38 patients with _Salmonella_ Typhimurium infections. Five of the patients were hospitalized.
